  • 8 corn tortillas (or flour, if preferred)
  • 2 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 1 cup bell peppers, chopped (any color)
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef with diced onions and bell peppers until browned (about 5-7 minutes). Drain excess fat.
  3. Stir in the enchilada sauce and simmer for 5 minutes.
  4. Layer the bottom of the baking dish with a thin layer of the beef mixture, followed by tortillas, more beef mixture, and cheese. Repeat layers until ingredients are used, aiming for at least three layers.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil during the last 5 minutes to brown the cheese.
