  • 8 oz rice noodles
  • 1/2 cup peanut butter
  • 1 cup full-fat coconut milk

  • 3 tbsp low-sodium soy sauce
  • 2 tbsp lime juice
  • 3 garlic cloves, minced

Instructions

  1. Press the tofu for 15 minutes to remove moisture. Cut into cubes.
  2. Cook rice noodles according to package instructions (4-6 minutes), drain, and set aside.

  4. In the same skillet, combine peanut butter, coconut milk, soy sauce, lime juice, and garlic. Heat until smooth.
  5. Add cooked noodles and sautéed tofu to the skillet with fresh vegetables. Toss gently to coat.
