- 2 lbs boneless chicken thighs
- 4 cloves fresh garlic
- 1 large onion
- 4 dried guajillo peppers
- 1 tsp cumin powder
- 4 cups chicken broth
- 1 tbsp apple cider vinegar
- 8 corn tortillas
- Chopped cilantro and lime wedges for serving
Instructions
- Soak dried guajillo peppers in hot water for 15 minutes; remove stems and seeds.
- Blend softened peppers, garlic, onion, cumin powder, apple cider vinegar, and 1 cup chicken broth until smooth.
- In a large pot, sear seasoned chicken thighs over medium-high heat for about 5 minutes per side until golden brown.
- Add the blended sauce and remaining chicken broth to the pot; cover and simmer on low heat for about 2 hours until the chicken is fork-tender.
- Shred the chicken using two forks and return it to the broth.
- Warm corn tortillas in a skillet for about one minute on each side; fill each tortilla with shredded chicken and top with cilantro. Serve with lime wedges.
