  • 2 lbs boneless chicken thighs
  • 4 cloves fresh garlic
  • 1 large onion
  • 4 dried guajillo peppers
  • 1 tsp cumin powder
  • 4 cups chicken broth
  • 1 tbsp apple cider vinegar
  • 8 corn tortillas
  • Chopped cilantro and lime wedges for serving

Instructions

  1. Soak dried guajillo peppers in hot water for 15 minutes; remove stems and seeds.
  2. Blend softened peppers, garlic, onion, cumin powder, apple cider vinegar, and 1 cup chicken broth until smooth.
  3. In a large pot, sear seasoned chicken thighs over medium-high heat for about 5 minutes per side until golden brown.
  4. Add the blended sauce and remaining chicken broth to the pot; cover and simmer on low heat for about 2 hours until the chicken is fork-tender.
  5. Shred the chicken using two forks and return it to the broth.
  6. Warm corn tortillas in a skillet for about one minute on each side; fill each tortilla with shredded chicken and top with cilantro. Serve with lime wedges.
