Instructions
- Peel and dice the mangoes; set aside some for topping.

- In another bowl, combine milk, egg, and melted butter; mix until smooth.
- Pour the wet ingredients into the dry mixture; stir gently until just combined.
- Fold in most of the diced mango.
- Heat a non-stick skillet over medium heat; grease lightly.
- Pour about half a cup of batter onto the skillet for each pancake; cook until bubbles form and edges are set (about 2 minutes). Flip and cook until golden brown (about 1 more minute).
