Instructions
- Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly.

- Once cooled, cut each potato in half lengthwise and scoop out most of the flesh into a bowl, leaving enough to maintain their shape.

- Spoon the filling back into the potato skins in a greased baking dish. Top with remaining cheddar cheese.
