  • 1/2 cup warm milk (110°F)
  • 1/2 tsp salt
  • 1/2 cup finely chopped pistachios
  • 1 egg (for egg wash)

Instructions

  1. Combine warm milk and yeast in a bowl; let sit until frothy (about 5 minutes).
  2. In another bowl, mix flour, sugar, and salt. Gradually add yeast mixture to dry ingredients; stir until shaggy dough forms.
  3. Knead on a floured surface for about 5 minutes until smooth.
  4. Roll dough into a rectangle; place cold butter slices on two-thirds of the dough. Fold uncovered third over butter and roll out again into a rectangle.
  5. Fold the rectangle into thirds again, wrap in plastic, and chill for at least one hour.
  6. Roll out chilled dough, cut into triangles, sprinkle with pistachios, and roll from base to tip.
  7. Preheat oven to 400°F (200°C). Brush croissants with beaten egg and bake for 15-20 minutes until golden brown.
