- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 can (15 oz) black beans, rinsed and drained
- 2 bell peppers (1 red, 1 green), diced
- 1 medium onion, diced
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) tomato sauce
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet over medium heat, add olive oil and cook seasoned chicken breasts for 6-7 minutes per side until fully cooked. Shred the chicken using two forks.
- In the same skillet, sauté diced onions and bell peppers until soft (about 5 minutes).
- In a large bowl, combine shredded chicken, black beans, sautéed veggies, taco seasoning, and tomato sauce; mix until well combined.
- Layer half of the mixture in the prepared baking dish, top with half of the cheese. Repeat with remaining mixture and cheese.
- Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
