Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper. In a skillet over medium heat, heat olive oil and sear the chicken for about 5-7 minutes on each side until golden brown.
- Add minced garlic to the skillet and sauté for another minute until fragrant. Pour in chicken broth and lemon juice; let simmer on low until the chicken is cooked through (about another 10 minutes).
- Remove chicken from heat, cool slightly, then shred into bite-sized pieces.
- On each tortilla, layer shredded chicken and sprinkle generously with both types of cheese. Optionally add sautéed veggies or fresh herbs.
- Roll up each tortilla snugly and place seam-side down in the prepared dish. Bake for 15-20 minutes until cheese is melted and bubbly.
