  • 3/4 cup granulated sugar
  • 1/2 cup Dutch-processed cocoa powder
  • 1/2 cup sour cream
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp agar-agar powder
  • 1/4 cup water (for agar)
  • 1/2 cup unsalted butter, melted
  • 1 ½ cups graham cracker crumbs

Instructions

  1. Preheat your oven to 325°F (160°C) and grease an 8-inch springform pan.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan to form the crust.
  3. In a bowl, beat together cream cheese and sugar until smooth. Add cocoa powder, sour cream, eggs, and vanilla; mix until combined.
  4. Dissolve agar-agar in water over low heat until fully dissolved. Gradually stir into cheesecake batter.
  5. Pour batter over the crust and bake for 50-60 minutes or until the center is slightly jiggly.
  6. Cool in the oven with the door ajar for an hour, then refrigerate overnight before serving.
